TUTOR: SIMON WOOD

This year, we are thrilled to be able to welcome Masterchef Winner and restaurateur, Simon Wood as our tutor.

COURSE DETAILS

This special course will take the freshest local ingredients and traditional Andalucian products and create culinary magic. The use of the best Extra Virgin Olive Oil, locally grown vegetables, fish fresh from the sea and meat with provenance is one of the many reasons why life expectancy is so high in Spain.

“ Maybe it’s something in the gazpacho or paella, as Spain just surpassed Italy to become the world’s healthiest country.”

— Bloomberg healthiest country index 2019

Over the course of the week, Simon will unpick some of the traditional and much-loved recipes from this region and guide guests through the steps needed to create visually arresting and beautifully flavoured variations on Spanish themes.

Essential to our course is the influence of local cooks, either from the village or from the bustling food scene in Granada where tapas still comes free with every drink. Together we will explore how best to use fresh seasonal fruit and vegetables, and fish caught in the Atlantic and Mediterranean. This is a very hands-on course, perfecting the techniques that can be taken home and used again and again.

Recipes that have been in families for years will be interpreted and developed in the kitchen to create exciting contemporary variations using fabulous ingredients sourced locally.

As part of the course, we will be inviting in local experts to discuss wines grown in the Granada region. We will also include a tour of some of our own favourite tapas bars in Granada and will then recreate the recipes back in the kitchen.

“Any reasonable sentient person who looks at Spain, comes to Spain, eats in Spain, drinks in Spain—they're going to fall in love. Otherwise there's something deeply wrong with you.”

— Anthony Bourdin
